Healthy Chicken Jalapeño Soup

Tonight for dinner I made one of our favorite soups, Chicken Jalapeño Soup. It’s so easy and healthy! Michael and I were just getting over the flu so this sounded really good.

Here is the recipe (I made this up on my own):

Ingredients:
-Olive Oil
-Minced garlic
-Diced onions
-Fresh cilantro
-Fresh jalapeños
-Fresh Limes
-Garlic Salt
-Pepper
-Fresh avocados
-Chicken breasts
-Sour Cream (light)
-Tortilla Chips

In a large soup pan, saute garlic and onions with olive oil. Once the onions are opaque, add 8 cups of water, chicken breasts, sliced jalapeños, sprigs of cilantro, garlic salt to taste and lots of pepper. Let cook on medium heat until chicken breasts are very tender (I usually let it cook for over an hour.

Then take the chicken out of the soup and shred with either forks or a mixer (I use my kitchen aid mixer.) Add chicken back into soup and your soup is ready.

For garnish add, place in soup bowl, add cubed avocados, fresh cilantro, fresh jalapeño, scoop of sour cream and sprinkle some tortilla chips and you got yourself a filling, healthy meal. I even had 2 bowls it was so good and healthy!
